Lauren is the full-time dietitian for Westfield State University Dining Services, where she works with the culinary team to develop menus that are healthy, sustainable and delicious. She works with students who have allergies and other dietary restrictions to make menu modifications and accommodate all dietary needs. Lauren also works for Pyramid Nutrition Services, where she is a per diem consultant dietitian in long term care facilities.

In her free time, Lauren enjoys hiking, running, working in her garden, and utilizing her farm share to create delicious meals for her and her husband. She enjoys trying new foods and her cuisine usually focuses on plant-based proteins and local produce.  Lauren is a big proponent of mindful eating and believes healthy eating should be part of your overall lifestyle, rather than a dreaded chore.

Lauren received her bachelors in nutrition from the University of Massachusetts Amherst, where she also completed her dietetic internship. Lauren is currently working on her Masters in Nutrition Education from Framingham State University.
